I was able to set up a fully functional Postfix mail server, with a web-based admin, multiple domains, webmail server, SQL, etc. by following the directions from http://diymacserver.com. It takes a bit of time to do all the setup, but I found it rather simple and straightforward for a unix-illiterate such as myself.
