Then when you have a search, strip out all accented characters from the search then search on the mirrored field instead? That way, you should be able to find all content. Should be easy to set this up. Batch update existing content. Add code for new content and edited content to keep the mirrored (and hidden) field updated. Use the same function to strip away all accents. Another approach is to keep the mirrored, accentless field updated and then do a multifield search without changing any user input.
