I spent 20 years selling creative services and in my experience, no legitimate client buys anything without some assurance that the resource can do the job. Asking people to organize a project and pay for a demo is a pretty high barrier to purchase, IMHO. If you're reluctant to show code, are you able to point people to a web site your group has coded?
