We're planning a transition to replace an aging 250GB Sun file server for similar reasons (as well as an 7x performance increase :) ).Based on our tests, I'm about 90% sure that installing an OSX server with the fastest hardware available would actually server SLOWER than our G4/500 running OS9 at current traffic levels (500k hits/month).
